Beef Suya

3 tbsp finely ground peanuts or (almonds)
2 tsp ginger powder
1 tsp paprika
1 tsp cayenne or red chilli powder (or more if you like it hot!)
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp white pepper
700 - 800g beef schnitzel
This is the most popular street food in Nigeria and you’ll soon taste why.
Lightly roast the peanuts (or almonds) and when cooled put them in a spice blender and make a coarse powder. Avoid over blending as they’ll start to become more like peanut butter.
Mix with the rest of salt and spices. Cut the beef schnitzel into 2cm strips and lay on baking paper or a tray. Sprinkle thoroughly on both sides of the strips with the spice mix.
Let refrigerate for 30 minutes or even overnight. Pre-soak bamboo skewers in water for 30 minutes and then thread meat onto skewers in a loose pleat style. 
You can also roll the schnitzel between two pieces of baking paper with a rolling pin to make it even thinner. This allows the meat to sear even quicker.
Get your barbecue quite hot then sear the skewers and enjoy. These skewers are known for their spicy heat so experiment with the amount of cayenne or chilli used.
